Paleo Sausage Stuffed Tomatoes

 

You’ve probably had stuffed peppers or stuffed mushrooms before, but have you ever had stuffed tomatoes? This recipe for Paleo-friendly stuffed tomatoes will surprise you by how easy it is to make and how delicious it is.

 

6 Tomatoes

1 lb. Ground Sausage

5 Button Mushrooms, diced

1 Medium Yellow Onion, diced

2 cloves Garlic, minced

 

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Brown the sausage, onions and mushrooms together over medium heat in a skillet.
  3. Remove the tops of each tomato, and scoop out half of the middle. Add the scooped out parts to the skillet.
  4. Add the garlic to the sausage after it has fully browned and continue cooking until the garlic is fragrant.
  5. Spoon the sausage mixture into each of the tomatoes then place the tomatoes in a casserole dish, or in muffin tins to keep them stable.
  6. Next, cover the dish with foil and bake for 15 minutes.
