You can still enjoy sweets on Paleo, just in moderation. I recommend expeller pressed coconut oil so curd doesn’t taste like coconuts. This recipe is perfect if you’re craving something sweet. Of course, I do like lemon more than chocolate though so I may be biased. Enjoy and don’t forget to share!
- 6 pastured egg yolks
- 1/2 cup fresh lemon juice
- 1/2-3/4 cup honey
- 1/2 cup expeller pressed coconut oil
- 1/2 teaspoon pure vanilla extract
- 1 tablespoon fresh grated lemon rind
- 1/8 teaspoon salt
Beat egg yolks well. Add yolks, lemon juice and honey to saucepan and heat over low, stirring constantly until mixture thickens. Remove from heat and allow to cool 5 minutes. If coconut oil is hard, soften a little before stirring a little at a time into yolk mixture. Stir in vanilla, lemon rind and salt. Pour into ramekin dishes and cool completely in refrigerator before serving.
