- 1/2 cup coconut milk or water
- 2 eggs
- 1 tablespoon coconut oil, melted
- 3 tablespoons maple syrup or honey
- 1 teaspoon vanilla
- 1 cup almond flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- Toppings: maple syrup, honey, blueberries or strawberries, bananas, clarified butter
Heat up waffle iron. Mix coconut milk, eggs, coconut oil, maple syrup, vanilla, almond flour, and cinnamon in a large bowl with hand mixer until well mixed. Stir in baking soda and salt just until mixed. Pour batter into waffle iron and enjoy.
