Paleo Vegetable Hamburger Soup

The whole family will love this soup. For the non-paleos, f you have picky eaters, you may want to mix in a small amount of cheddar cheese on top of each serving.

  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 pound ground beef, preferably grassfed
  • 4 1/2 cups beef stock
  • 8 oz can tomato sauce
  • 1 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon parsley
  • 1 bay leaf
  • 1 can diced tomatoes
  • 2 medium carrots, diced
  • 1 cup frozen snow peas

In a large pot, cook onion, green pepper and ground beef until meat is cooked through. Drain fat. Stir in beef stock, sauce, seasonings, tomatoes and carrots. Heat to boiling, then reduce heat and simmer covered for 15 minutes. Add in snow peas and heat through, about 5 minutes. Remove bay leaf and serve.

    Snow peas are paleo? Thought they were lentils?
