Paleo Peach Tart Recipe

This would be a great dessert to serve to everyone, paleo or not as they won’t even notice grains are missing.

  • 3/4 cup well- chopped walnuts or mixed nuts
  • 2 cups almond flour (or grind your own blanched almonds)
  • 1/8 teaspoon sea salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1/2 cup honey
  • 3/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla
  • 3 cups sliced peaches
  • 1/4 cup chopped walnuts, optional for topping

Preheat oven to 375.

Pulse walnuts a few times in coffee grinder. Combine nuts, flour,  salt, baking soda and cinnamon in a large mixing bowl. In a smaller bowl beat the egg. Then add honey, coconut oil, and vanilla. Add this mixture to nut flour mixture. Grease tart pan and press about 3 cups of the mixture in the bottom forming a crust. Top with peaches then sprinkle with remaining crumb mixture. Top with optional walnuts. Bake for 30 minutes and allow to cool 10 minutes before serving.
