Paleo Meatball and Spinach Soup Recipe


Lovely little meatballs floating in a flavorful broth. You’ll love the flavor of this soup with a nice presentation. Serve with a green salad and some berries for dessert.

  • 1/2 medium onion, finely diced
  • 2 finely diced carrots
  • 1 tablespoon olive oil
  • 2 garlic cloves
  • 1 teaspoon sea salt
  • 1/4 teaspoon thyme
  • 1/2 teaspoon freshly ground black pepper
  • 1 pound ground beef, preferably grassfed
  • 1 egg
  • 6 cups beef broth, preferably homemade
  • 1 teaspoon salt
  • 1 garlic clove
  • 1 bay leaf
  • 4 cups washed and torn spinach leaves

In olive oil, cook onion and carrot until soft. Stir in 2 garlic cloves during last minute.  Heat beef broth, 1 teaspoon salt and garlic clove to boiling over medium heat. Thoroughly mix ground beef, egg, salt, pepper, thyme, and onion mixture together.  Form into small meatballs, about one inch, and slowly drop into boiling broth. Add bay leaf. Return to boil and heat about 12 minutes until cooked through. When meatballs are thoroughly cooked, add in spinach and heat about 8-10 more minutes. Remove bay leave and season with additional salt and pepper as needed.

    This looks YUMMY! :) Def a GREAT alternative to those stupid canned soups that have a whole bunch of crazy ingredients that make your head spin!
