Paleo Lettuce Wrap



  • 1 Lb. of pork shoulder, cut into thin strips
  • 1 onion, cut in feathers
  • 1 carrot, cut into small cubes
  • 1 zucchini, cut into thin slices
  • 1/2 large head of lettuce
  • 1 ripe avocado
  • 1 clove of garlic, minced
  • 1 lemon
  • Extra virgin olive oil
  • Coarse sea salt
  • Fresh ground black pepper to taste


Prepare guacamole with avocado, lemon juice, garlic, a pinch of sea salt, a splash of extra virgin olive oil, using a mortar and reserve. In a wok, with a little coconut oil, add onion, and carrots, with a little coarse salt and sauté for 3 minutes. Add ​​zucchini.

Add pork, salt, pepper and a splash of virgin olive oil. Remove and let sit for 5 minutes. Turn off and set aside.

Wash the lettuce leaves carefully to prevent breakage. Choose the bigger and stronger pieces for your wraps. Put one large lettuce leaf on each person’s plate and fill with the wrap mixture. Top with guacamole.

Wrap the lettuce leaf around the mixture and eat with hands. If that is difficult because it is falling apart or too big, you can eat with a fork and knife.  Serves two.
