The Best Paleo Lasagna Recipe


Cheesy lasagna is a quick and easy dish that almost everyone loves. However processed grains are forbidden on the Paleo diet. To counteract this, we’ve utilized the versatile zucchini as a noodle replacement.

4 Medium Zucchini, sliced thinly
1 lb Grass Fed Beef
6 cups Spinach, chopped
1 White Onion, diced
1 Can Tomato Paste
2 Tomatoes, diced
5 cloves Garlic, minced
1/2 tbsp. Dried Basil
1/2 tbsp. Dried Oregano
½ tsp. Salt
1 tsp. Pepper
Olive Oil


  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a large stockpot, sweat the onion and garlic together in olive oil for 3 minutes. Next, add the ground beef and brown it.
  3. Once the ground beef is browned, add the diced tomatoes, tomato paste, and spices. Cook for another 10 minutes on medium heat.
  4. Add the chopped spinach to the stockpot and cook it down until it completely wilts and combines with the other ingredients.
  5. Next, place one layer of zucchini strips in a baking pan and pour the meat and veggie mixture on top. Continue layering the lasagna with the remaining ingredients.
  6. Cover the baking dish with foil and bake the lasagna for 30-40 minutes.
