Paleo Curried Deviled Egg Recipe

 

This is a delicious twist on a classic recipe. Be sure and sure serve it to guests and they’ll rave over it. Have copies of the recipe ready to hand out. If you’re able to pipe the filling in, it will be very pretty too.

  • One dozen hard boiled eggs, sliced in half
  • 2 tablespoons coconut oil
  • 3 teaspoons curry powder
  • 2 garlic cloves, minced
  • 2/3 cup mayonnaise
  • 1/2 small onion, diced
  • 1 1/2 teaspoons sea salt
  • 1/2 teaspoon hot sauce, optional
  • Paprika or additional curry powder

Melt coconut oil over low heat and stir in curry powder and garlic. Cook until garlic is softened, about two minutes. Remove yolks from eggs and smash in a large bowl. Stir in curry garlic mixture. Add remaining ingredients and mix well. Spoon or pipe filling into eggs and sprinkle with paprkia or curry powder.  Refrigerate at least 1/2 an hour before serving.
