Paleo Cinnamon Pancakes Recipe

 

Pancakes are a wonderful way to start out your morning. They are super customizable and offer you a sweet start to your day. Try this simple recipe and add your own twist to it to make it your own.

2 Large Eggs
3 tablespoons Soy, Rice, or Almond Milk
2 Bananas
1/2 teaspoon Vanilla Extract
2 tablespoons Almond Flour or Sweet White Rice Flour
1/2 teaspoon Cinnamon
1/4 teaspoon Baking Soda
Pinch of Salt

  1. Mash the bananas until they are completely smooth. You can mash them with a fork or use a food processor.
  2. Add the eggs and whisk the mixture together until smooth.
  3. Add the rest of the ingredients and stir. If the batter is too wet, then add more flour one teaspoon at a time.
  4. Fry the pancakes in olive oil or coconut oil and serve with pure maple syrup.

To customize this recipe you can add chopped fruit, nuts, honey, pumpkin puree or even chocolate chips. To make crepes from this batter, simply add extra milk to the batter to thin it out.
