Paleo Banana Bread Recipe

 

Banana bread is a wonderful comfort food that often reminds people of their childhoods. Its warm, cinnamon taste can easily take you back to your Mother or Grandmother’s kitchen. This Paleo version of Banana Bread is absolutely perfect and is so full of flavor, that you won’t want to believe its actually good for you!

 

5 Ripe Bananas
1/4 cup Honey
4 Large Eggs
1/2 cup Cashew Butter
3 tablespoons Coconut Oil
1/2 cup Almond or Sweet White Rice Flour
1 tablespoon Cinnamon
1 teaspoon Baking Soda
1 teaspoon Baking Powder
2 teaspoons Vanilla
1 teaspoon Nutmeg
1/4 teaspoon Sea Salt

 

  1. Preheat your oven to 325 degrees Fahrenheit.
  2. Mash 4 of the ripened bananas with a fork and then combine the bananas, eggs, cashew butter, and coconut oil. Mix with a hand mixer to combine thoroughly.
  3. Add the almond or sweet white rice flour, the all of the spices, the baking soda and powder, the vanilla and the salt and mix well with your hand mixer.
  4. In a small skillet heat the honey on low and slice the remaining banana and add it to the skillet. Cook on low and stir the bananas frequently to promote caramelization. Sauté for 8-10 minutes.
  5. Grease a bread loaf pan with extra coconut oil or olive oil then pour the caramelized bananas into the bottom of the pan. Spread the banana slices out equally.
  6. Pour the banana bread mixture on top of the caramelized bananas and bake for 45-50 minutes.
