Paleo Italian Meatballs

 

Meatballs in rich and hearty tomato sauce is the perfect weekend meal. This recipe combines veggies, beef and turkey to create wonderful meatballs in a delicious sauce. Eat them plain, or throw them on top of zucchini noodles for a flavorful meal.

 

1 lb. Ground Beef

1 lb. Ground Turkey

1/2 White Onion, diced

1/4 cup Rice Flour

1 Egg

1 tablespoon Italian Seasoning

3 cloves Garlic, minced

1 Medium Tomato, diced

1/2 cup Yellow Pepper, diced

1 tablespoon Tomato Paste

1/2 cup Water

1/2 tablespoon Salt

1 teaspoon Dried Basil

1 teaspoon Dried Oregano

1 teaspoon Dried Thyme

 

  1. Mix the ground beef, ground turkey, onion, rice flour, minced garlic, egg and italian seasoning in a bowl.
  2. Shape the meat mixture into equal sized meatballs and place them on a baking sheet.
  3. Bake the meatballs at 350 degrees Fahrenheit for 20 minutes.
  4. Next, puree the medium tomato in a food processor.
  5. Add the pureed tomato, tomato paste, diced yellow pepper and water to a large stockpot.
  6. Add the salt, basil, oregano, and thyme to the stockpot and stir.
  7. Lay the meatballs in the stockpot and simmer on low for 30-45 minutes.
