Paleo Grilled Shrimp Skewers

 

These shrimp cook up in minutes but should be allowed to marinade for a few hours for the flavors to develop. These would make a quick New Years appetizer for paleo and non paleo eaters alike.

  • 2 pounds raw shrimp, peeled and deveined
  • 1/2 cup tomato juice
  • 4 tablespoons fresh lemon juice
  • 10 drops of hot sauce
  • 1/3 cup extra virgin olive oil
  • 3 garlic cloves, smashed
  • 2 teaspoon dried basil
  • 1 teaspoon salt

In a mixing bowl, combine all ingredients except shrimp. Pat shrimp dry and stir in shrimp. Allow to marinade in bowl in refrigerator for 3-4 hours. When ready to cook, heat grill to medium. Thread shrimp onto skewers. Grill over medium heat around 6 minutes, turning once. Serve warm
