Easy Paleo Chicken Stock Recipe

 

Most people are initially intimated to make their own chicken stock. You’ll be surprised how quick it is to prepare in a crockpot. Just throw it in, and forget it! Freeze extra stock in ice cube trays, freezer bags or glass jars, allowing for room to expand. If you can find chicken feet, it will add more nutrition to your stock.

  • 1 chicken carcass
  • chicken feet, optional
  • water
  • 1 bay leaf
  • 2 teaspoons sea salt
  • 2 teaspoons black peppercorns
  • 1 teaspoon minced garlic
  • 2 celery stalks
  • 2 whole carrots

Cover chicken with water in crockpot and turn on High. Do not overfill or flavor will be bland. After about 3 hours in the crockpot, add seasonings. Leave on High for 12-24 hours. About 1-2 hours before ready, add celery and carrots. Strain stock, pour into containers and place in refrigerator.
