"Can't Believe It's Paleo" Brownies Recipe

 

Everyone loves chocolate, even people who have strict, healthy eating habits. These Paleo brownies won’t ruin your diet, and still taste great because of a super simple secret ingredient.

 

5 oz Chocolate Chips (Paleo friendly in moderation)

1/2 cup Almonds

1 tablespoon Coconut Oil

1 Large Ripe Avocado

1 Ripe Banana

1/2 cup Pure Maple Syrup

1/3 cup Unsweetened Cocoa Powder

1 tablespoon Vanilla Extract

1 tablespoon Almond Flour

3 Eggs

1/2 teaspoon Baking Soda

1/2 teaspoon Baking Powder

Pinch of Salt

 

  1. In a glass bowl stir together the coconut oil and chocolate chips. Reserve a small handful of chocolate chips and set aside. Microwave the mixture for 10 second intervals until it is melted. Stir the mixture every 10 seconds.
  2. Peal and core the avocado and puree it and the peeled banana in a food processor. The puree should be free of lumps when finished.
  3. Combine the avocado banana mash with the melted chocolate and stir thoroughly.
  4. Pour the rest of the ingredients, except the almonds, into the bowl and mix with a hand mixer until the batter is smooth.
  5. Grease a square pan with coconut oil or olive oil and pour the batter into the pan. Sprinkle the batter with the reserved chocolate chips and almonds.
  6. Bake the brownies at 350 degrees Fahrenheit for 30 minutes.
