Bacon Stuffed Portabello Mushrooms

Bacon is a common ingredient in Paleo cooking. Its quick and easy to make and is packed with protein and flavor. These bacon stuffed portobello mushrooms are perfect for busy weeknights when you have little time to cook.


4 Large Portobello Mushrooms
10 Strips Bacon
1/2 White Onion, diced finely
1 Green Pepper, diced finely
1 Tomato, diced
4 cloves Garlic, minced
3 cups Spinach, chopped


  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Clean and de-stem all of the mushrooms. Save the stems and chop them roughly.
  3. Next, cook the bacon and chop it roughly when it is finished cooking.
  4. Drain the bacon grease from your skillet, then add all of the diced veggies and mushroom stems to the skillet. Cook over medium heat for 3-5 minutes.
  5. Next, add the garlic to the skillet and cook for another 3 minutes.
  6. Mix the vegetable mixture with the chopped bacon then divide the mixture into the four mushroom caps evenly.
  7. Place the mushroom caps on a baking sheet and bake for 15 minutes, uncovered.
