Paleo Apple Cinnamon Muffin Recipe

 

Serve these for breakfast or a quick snack. Freezeable as well for breakfast on the go. Serve with unsweetened jam or almond butter.

  • 2 1/2 cups ground almonds, preferably crispy
  • 1/4 cup apple butter or unsweetened applesauce
  • 1/3 cup honey
  • 1 peeled and diced apple
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3 eggs, preferably free range, beaten.

Preheat oven to 375 degrees. Grind almonds if haven’t already done so. Mix together almond flour, apple butter, honey, cinnamon, ginger and honey. Gently stir in apple, baking soda and salt. Generously grease 12 muffin cups or line with liners. Fill till about 3/4 full. Bake 20-25 minutes or until toothpick inserted comes out clean.
